Midnight Moon Cookies are perfect for Halloween, it’s no trick when these are the real treat. An optional step, when I make these cookies I spread cinnamon sugar on the top when I roll them out.
- 1 cup of finely grated almonds
- 1 ¼ cups of flour
- ¼ cup of confectioners sugar
- ¼ cup of butter
- 1 egg yolk
- 2 tsp of cinnamon
- 1 tsp of nutmeg
- A dash of grated lemon peel
- Optionally Grated lemon peel can be substituted with tbsp. of honey
Step one: Prepare a baking sheet.
Step two: In a bowl Mix almonds, flour, and sugar then work in the butter, egg, cinnamon, nutmeg, and either lemon peel or honey.
Step three: Once mixed, set mixture in the fridge for thirty minutes and preheat the oven.
Step four: Roll out the cookie dough and cut into crescent moons. Put on a prepared baking sheet and bake for 15 minutes and cool on a wire rack. Optionally more sugar can be sprinkled on the top.
