
I make Gingerbread cookies around this time of the year and what better way to spread joy than to share my recipe so that others can make cookies for there loved ones. This makes a very large batch of cookies. this recipe can make roughly 72 cookies each about a tablespoon in size.
Ingredients:
6 ½ cups all-purpose flour
2 tablespoon ground cinnamon
2 tablespoon ground ginger
6 teaspoon baking soda
6 teaspoon ground cloves
1 teaspoon ground nutmeg
1 teaspoon salt
6 Tablespoons unsalted butter
1 cup packed brown sugar
2 large egg
1 cup unsulfured molasses
3 teaspoons vanilla extract
Instructions:
Step One:
Mix together flour, cinnamon, ginger, baking soda, cloves, salt and nutmeg. Set aside.
Step Two:
In a different bowl, beat the butter and sugar together until it is light. Add the eggs, molasses and vanilla, and beat well. Gradually add the mixture from step one until just combined.
Step Three:
Divide the dough and form two balls, Then gently flatten each ball and wrap in plastic wrap, set in the refrigerator for 1 hour
Step Four:
Preheat the oven to 350 degrees Fahrenheit and prepare a large flat sheet pan.
Step Five:
Flour your work surface lightly, place the unwrapped dough. Roll into small circles or shape them to your desired look. Bake for 10 minutes, let them cool for 5 minutes, and finish cooling on a wire rack. Decorate to your desire once they are room temperature.
